Breakfast is by far my favorite meal of the day, and honestly what motivates me to get out of bed in the morning. I like cooking up a big breakfast for myself, but more times than not I’m in a rush and don’t have the luxury of sitting to enjoy a big, nutritious breakfast. When I’m in a time crunch, it’s easy to forgo breakfast – grab some coffee and power through until lunch. The first meal of the day is one of the most important, and a busy schedule should never justify skipping this meal. Here are three of my go-to on-the-go breakfasts that are perfect when I find myself in in pinch: Avocado toast is a breakfast staple, so easy to make and you can carry it around with you if/when necessary. There’s no recipe for my avocado toast, but I’ll dish it out:
- Toast bread
- Coarsely mash ½ avocado with a drizzle of olive oil, add a pinch of salt and pepper.
- Add avocado to toast
- Optional: add egg, bacon, pickled onions drizzle with sriracha and red pepper flakes
I’m a lover of Greek yogurt – I’ll put it in or on almost everything if I can. Lately, I’ve been all about Chobani’s bottled Drink Chobani beverages. They’re delicious, and the sippable yogurt beverage is ideal for taking your breakfast out the door with you. They come in 10 flavors, with some of my favorites being Mixed Berry (pictured!), Coffee & Cream, and Peach. While they range in the nutritional facts, they’re all a great source of protein (hovering around 15g), made with real fruit, and packed with probiotics.
Oatmeal is another fast and filling alternative. You can make a bowl of oatmeal in the microwave in under two minutes and dress it up in so many different ways. I’ll usually sweeten with some dried cranberries or raisins and add some granola or nuts for a little texture and crunch. You can add a tablespoon of peanut butter and sprinkle cacao nibs or add cinnamon and a touch of vanilla or a healthy alternative. Oatmeal always seems to keep me full and well up until lunch.
A coffee is, of course, a necessity and not every breakfast, but once or twice a week I’ll add in a fruit juice as well. How do you start your day? I’d love to hear what some of your favorite on the go breakfasts are.
